I love soup and I love my crock pot. This quick easy lentil soup is one of my go to recipes. I love the versatility of this recipe as well. Sometime I will add spinach, kale, or even some brown rice to the recipe.
Ingredients:
- 1 onion chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 tablespoon of Himalayan Pink Crystal Salt
- 1 tomato chopped
- 2 tablespoons tomato paste
- 2 cup green lentils
- 1/2 teaspoon thyme
- 1 bay leaf
- 1/4 teaspoon ground pepper
- 6 cups vegetable broth
- 5 cups water
Throw all ingredients in crock pot on low for 8 hours. Cool and add 3 teaspoons of red wine vinegar. Some times we add a couple drops of hot sauce. Salt and pepper to taste. Enjoy!
